how do the Chinese fertilize vegetables with human excrement?

I understand from Theodore “Ted” DeBary of EALAC at Columbia University that the vegetables used in chinese cuisine are largely grown with “natural” fertilizer methods.

How exactly are these ancient “additives” applied to the bean sprouts, mushrooms and snow peas? Do the methods vary from one region to another, as the various dialects of Chinese so differ, or, as is more likely, does the basic “crouch and shoot” regimen apply throughout the Middle Kingdom?

Well, many farmers use excrements on their vegetables or whatever they are growing. Simply because it has a bunch of vitamins and helps keep the soil fertile when it decomposes. Actually a lot of people use excrements to fertilize they put any waste or even trash in a compost and mixes it with other great things and maybe even a soil base until it becomes rich fertilizer.
As a personal question if you would please answer. Are you majoring in East Asian Studies at Columbia University ( My sister goes there although she is majoring in anthropology ) but if you are majoring in east asian studies what do you think about the program and what do you think about the classes? I’m thinking about majoring in that field and would like some advice.
