How far ahead can I cook my Thanksgiving dishes?

I ALWAYS overcook Thanksgiving (and Christmas, for that matter) and this year I'd rather not spend all day in my kitchen doing dishes, so I thought ahead and cook some to freeze thawing day before and simply re-heat in the day of turkey. Has anyone ever done this? Is it a good idea? Will it compromise the taste of the dishes (some with vegetables, cheese, eggs, whatever)?

I usually make the day before and after Thanksgiving day I reheat. if made too far ahead and then the flavor is compromised.
