What are some Good Meals for a starving student?
I am in university, so money is always a bit tight, but I do like to eat balanced and tasty meals. Lately I have been running out of ideas and the contents of my cookbooks just aren’t cutting it – so I am hoping for a little help.
I am looking for relatively simple (I can find my way around a kitchen but I’m no celebrity chef!) recipes that can be made using predominantly common kitchen staples and modestly priced ingredients. A shortish prep/cooking time is a plus though I do have a Slow Cooker.
I’m not a picky eater but I am adverse to mushy or slimy sorts of textures like baked beans or cooked zucchini…

You know I kind of miss those days, you have to be so much more innovative. My stand by used to be beef ramen noodles cooked until soft but not mushy in the microwave without the seasoning packet. Then you drain them throw them in a pan with some oil and toss them a pit. Add the seasoning packet, a couple packets of left over soy sauce from takeout, and some frozen broccoli. If you can spring for a little bit of meat it makes it better as does minced garlic and ginger. It is a little high in calorie content, but I used a lot of broccoli and split a pack of ramen noodles between myself and my roommate. It’s filling, and delicious.
I also used to make a lot of egg noodle sliders. I would just take chicken base to make a stock, or if you prefer lower sodium just buy a box or a can. Then you use 1 egg, a cup of flour, and a half of egg shell full of water to make pasta dough. Drop teaspoon size pieces of dough into the broth and wait for them to float. It makes a lot and costs very little. You can get about 4 bowls of sliders with one batch of dough. You could add veggies if you have the money. I always used frozen, because I could get a variety for fairly cheap. I love them by themselves though.
If you can afford to buy meat and just want to make it go further I suggest rolling thin pieces around something else. For instance I used to buy a round steak and then I’d get a bag of frozen spinach , and cheese slices from the deli that melt well like Monterrey or Muenster( I’d get them from the deli, so I wouldn’t have to buy a whole package, ask for just a few slices as thin as their machine can slice.) You can pound out the steak to be super thin with a hammer, or even a book, just put plastic wrap over it first. Unthaw the spinach and squeeze out the water by putting it in a clean kitchen towel, folding the corners in, and turning the top. Then thinly put a layer of cheese and spinach on the meat. Roll it up so that you have a longer roll, and cut it into 1 inch thick pieces. Then put a skewer through it. You can season it how you like. I usually put a little salt and pepper on it to keep it simple. They do better in an oven than a fry pan, because of the cheese. However I’ve done it both ways. I could usually get 8-10 servings out of 1 steak. Then make some mashed potatoes or rice, and a veggie. It looks fancy and expensive, but if you do it right you can feed 8-10 people for less than $20. It’s great if you are having people over.
