[Chinese people only] in your opinion, what is the best …?
… cookbook of Chinese Food around? What is the most accurate? Do not want to end up buying a book that is written by a white guy with soft food tasting. I want the real, against authentic. What would you recommend?
One Book of Martin Yan. Why? He is Chinese. I am an excellent cook by the opinion of other peoples. The father was a chef cake decorator and trained competition. Do not laugh too was a career Marine Sargent, DI, rifle instructor. But he was also trained chef school the best hotel in Hawaii at the time. I have a couple of books Yan. Easy to follow. Adaptations for the North American ingredients of course. I just returned from three weeks in China this week. Yan recipes are very close to what was there. And I only ate Chinese. I was good with chopsticks when I was there, better now! No I am not Chinese, but have said they will seek part of China. Must disagree with JB because Ming openly admits that his is a mix of ethnic cuisine. He is good though. Thus as inauthentic.
