Whats best for Chinese cooking? Sherry or Rice Wine?

Is it Ok to use medium dry sherry rather than just dry? And if I use rice wine, how long will it keep once I’ve opened it?

I would say rice wine, just because I’m chinese and no one i know cooks Chinese Food with sherry. And i would think it’s ok to use any form of sherry, it might not even be noticeable enough to alter the taste. My bottle of rice wine was opened 6 months ago and i’m still using it…so it should be ok for at least that long.
