Margaret Fulton Chicken and corn soup recipe, anyone?

Chicken and sweet corn soup Ingredients 1 can corn kernels 4 scallions bulbosa 2 cloves garlic, minced (or 1 teaspoon crushed garlic cheaters before) 1 knob of ginger peeled and chopped (or 2 teaspoons minced ginger cheaters before) 12 Wingett chicken (the fleshy part of the wing) 20g dried shitake mushrooms (1 / 2 a package) 1 / 2 cup soy sauce 1 tablespoon sesame oil 1 star anise 5 cups boiling water Instructions Cut the white heads of the onion, tail them, cut them into quarters and separate the segments. Reserve green parts for later. Heat the oil in the bottom in a large saucepan and add the onion, ginger, garlic and chicken, and cook until chicken skin has a bit of color (10 minutes). Add the boiling water, mushrooms shitake and star anise to the pot and allow to simmer gently with the lid of at least 1 / 2 hours. As fat increases the surface, gently skim out with a spoon. Add the corn kernels and cook over low heat for at least another 1 / 2 hour, still skimming the fat if necessary. Add the sliced spring onion green fair before serving. Variations Replace Wingett with chicken legs for a more substantial meal, chicken breast or a low fat content. If you use chicken breast, add that when you add the corn, and replace at least some of the water for chicken broth. You can also add noodles to thicken up. A vegetarian version would use tofu instead of chicken and vegetable broth. Serves four to six, and freezes well. hope it helps!
