Anywhere in LA to see chefs cooking for the public?

I want to be a better cook, but do not have the time or the budget to take cooking classes as the Pasadena Culinary Inst. Besides, I really do not have time to go to regular cooking classes. So I wonder if there are restaurants or places where people can go to see big or even live chefs prepare their magic? I am interested in the northern Italian, Thai, Indian and Mandarin Chinese. Has anyone heard of something like this available in Los Angeles? Thanks

Have you ever attended the Wine & Food Festival in LA? http://www.westernfoodexpo.com/App/homepage.cfm?moduleid=42&appname=100203 Is August 18-20 and will include cooking demonstrations by a number of cooks. They have the schedule up yet for this year, but last year included Tommy Tang (Thai cuisine), Iron Chef Cat Cora and Amy Reiley is one of only 15 people in the world to celebrate the title Master of Gastronomy of Cordon Bleu in France. There was also a Chinese Food festival in June 2006 which I think is annual. They give Presented by local chefs.
