Can anyone recommend a Healthy Eating cookbook?

I am looking for a Healthy Cookbook that doesn’t have the weird ingredients that some of the more trendy cookbooks have. I am from the midwest (minnesota) and we eat a lot of hot dishes and roasts. I want to add more vegetables to my palate and help my family eat healthier. I also am at risk for diabetes, so i am open to lower carb cookbooks. any suggestions? thank you!
