Butternut Squash Soup "delicious and very easy to do. You can use 3 to 4 cups of chicken broth instead of water and stock cubes. It also works well with half the Cream Cheese a lot if you do not want is too rich. "6 tablespoons minced onion 4 tablespoons margarine 6 cups peeled and cubed pumpkin 3 cups water 4 chicken bouillon cubes 1 / 2 teaspoon dried marjoram 1 / 4 teaspoon black pepper 1 / 8 teaspoon cayenne pepper 2 (8 ounce) packages cream cheese in large saucepan, saute onion in margarine until tender. Add the pumpkin, water, broth, oregano, black pepper and cayenne pepper. Bring to the boil and simmer 20 minutes or until squash is tender. Puree pumpkin and cream cheese in a blender or Food Processor in batches until smooth. Return to the saucepan, and heat through. Do not let boil. Makes 6 servings. ==================
