Think I found it! "Burning Chili Sheila Lukins 2 squash Olive Oil 2 tablespoons medium onions, cut into 1/4-inch dice 2 tablespoons minced garlic 2 medium red bell peppers, stemmed, seeded and cut into 1/2-inch cubes 3 tablespoons chili powder 2 tablespoons ground cumin 1 1 / 2 tablespoons dried oregano 1 / 2 teaspoon allspice pinch of crushed red pepper flakes 2 cans (28 ounces each) chopped plum tomatoes with juice 1 / 2 cup dry red wine 2 butternut squash, seeded, peeled and cut into 1/2-inch cubes 1 orange zest and salt black coarsley pepper to taste 2 cans (15 1 / 4 ounces each) dark red beans, drained 2 tablespoons chopped fresh cilantro 2 tablespoons flat leaf parsley 3 scallions (3 inches to the left in green), thinly sliced on the diagonal for garnish 1. Heat oil in a large pot over medium-low. Add onion, garlic and peppers. Cook for 10 minutes, stirring occasionally, until vegetables are wilted. Add chili powder, cumin, oregano, allspice and red pepper flakes and cook for 1 minute , stirring to coat vegetables with spices. 2. Add tomatoes with juice, red wine, pumpkin, orange peel, salt and pepper. Bring to boil, reduce heat to medium low and cook uncovered for 20 minutes or until squash is tender. Adjust seasonings to taste. 3. Stir in beans and simmer 10 minutes. Just before serving, add cilantro and parsley. Serve garnished with chives. JM
