Looking for recipe for meat and cheese cheese?

There is a meat shop in Allentown PA Vince's great call. It has the best cheese sauce. I am looking for accommodation either brand cheese sauce they use or a recipe for the sauce. Can anyone help?

Let this simmer as long as possible .** Court roll centers Hoagie, put mayonnaise and cheese on the bottom, the flight of a mixture of meat, put in roll, mayonnaise top piece and put back on sandwich. You can add more cheese in the top of meat if desired. ** Sometimes I add about 1-1/2 cups of beef broth and cook over low heat. For best results, place the completed mixture in a clay pot and let simmer all day.
