Can I eat raw coconuts from the first phase of the South Beach Diet?
I am on the first phase of the South Beach Diet and was wondering if it's OK to eat coconut. Do not eat refined. Basically I buy a mature coconut shop, crack open and eat the white part (meat) inside. Do not add sugar or flavorings. Is this allowed in the South Beach Diet? I think the skin to be eaten with the meat is rich in fiber, but I'm not sure about carbohydrates and sugars in a coconut. Thank you.
