What are some of the more unusual wild game animals are safe to eat, and how are they prepared?
I've heard of people eating 'Possum,' Coon, turtles and armadillos – but what are the best methods of preparation of each? I know how to cook deer, rabbit and squirrel, but what other animals can eat safely?
Alligator Fingers Ingredients 2 pounds alligator meat, diced 2 tablespoons vinegar salt and pepper oil for frying 1 / 4 cup all-purpose flour 1 cup cornmeal 2 tablespoons garlic powder 1 / 2 teaspoon pepper cayenne pepper sauce 2 teaspoons black pepper Optional: 3 tablespoons mayonnaise 2 teaspoons prepared horseradish 1 tablespoon mustard 1 tablespoon red wine vinegar reach Place the crocodile meat in a medium bowl and mix with vinegar, salt, and pepper. Cover and refrigerate 10 minutes. Pour oil into large skillet to a depth 1 inch, and heat over a medium high heat. Add to a large zippered bag of flour, cornmeal, garlic powder, cayenne pepper and black pepper. Press excess liquid from meat, and add a handful of meat to seal bag. Shake to coat. Remove meat, shake off excess flour and set on a plate. Repeat with remaining meat. When the oil is hot, place meat pieces into oil, being careful not to overload. Fry until golden, about 3 minutes. Remove for paper towels and serve hot. To make the sauce, mix in small bowl the mayonnaise, horseradish, mustard and red wine vinegar. Boar Stew with sauerkraut Ingredients 2 (20 ounce) cans sauerkraut, drained 3 pounds of wild boar roast 1 large onion, quartered 4 potatoes, peeled and cubed 4 carrots, cut into 2-inch pieces 1 (12 fluid ounce) can or bottle of beer Instructions Preheat oven to 300 degrees F (150 degrees C). Pour a can of sauerkraut in the bottom of a Dutch Oven. Set the roast on top of, and then arrange the potatoes onions and carrots around the roast. Cover with the remaining can of sauerkraut and pour in beer. Cover with a lid. Bake in preheated oven until the roast is very tender, about 3 hours Wild Goose breast with orange glaze Ingredients 4 goose breasts salt to taste 1 dash of dry vermouth (optional) 1 tablespoon orange zest 1 orange, juice 1 tablespoon lemon juice 1 teaspoon brown sugar 1 clove garlic, minced 1 tablespoon soy sauce 1 / 2 teaspoon dry mustard 1 / 4 teaspoon caraway seeds Directions Preheat oven to 350 degrees F (175 degrees C). Wash chicken breasts in cold water and place in a baking dish. Splash with vermouth, then season with salt, set aside. In a medium bowl, combine orange zest, juice orange, lemon juice, brown sugar, garlic and soy sauce. Season with mustard and cumin. Pour glaze over the breasts in baking dish. Bake in preheated oven for 30 minutes, or until no longer pink and juices run clear. Suffice it at least twice during cooking.
